Berry Basil Juice

We like to add basil to any juice for a fresh, herb flavour. However, basil can be a bit tricky to juice. We feed it through tube with other ingredients for best results. Basil helps with indigestion, nervous tension, stress and tension headaches.

1 bunch kale
2 small apples
2 cups strawberries
2 cups blueberries
handful fresh basil

Wash all produce thoroughly. Process through the juicer. Stir. Pour over ice and serve immediately.

2 weight watchers points per cup of juice.

Beet Juice

Beets are one of my favourite vegetables cooked, so I have been excited to experiment with them in the juicer. Beets are high in vitamin A, antioxidants, potassium and are cleansing for the liver. This juice is healthy,tasty and full of earthy flavours!

2 large beets, tops intact
4-6 stalks celery
2 apples
1 lime

Wash all produce thoroughly. Process through the juicer. Stir. Pour over ice and serve immediately.

Makes 4 cups

Carrot Apple Lime Juice

This juice is high in antioxidants and vitamins. It’s fresh, delicious and super quick to process. Be sure to wash all of the produce well before juicing.

5-6 medium carrots
2 apples
1 medium lime or 3 key limes

Using a juicer process carrots, apples and limes. Whisk and pour over ice. Drink immediately.

Makes 2 servings.

Green Goodness Juice

Juicing is definitely gaining popularity. I first began learning about juicing in the Hungry for Change documentary http://www.hungryforchange.tv/ Afterwards, I was intrigued and curious to learn more. After (what felt like) extensive research, I purchased a Breville Juice Fountain which is a centrifugal juicing system. I’ve been juicing several times a week and have been loving experimenting with new creations. I definitely have increased my daily veggie intake and I have also been a having fun trying out new items from the produce section! Experts say that there are many benefits to drinking fresh juice including an improved immune system, increased energy and clear skin. No wonder it is becoming popular!

Green Goodness
1 English cucumber
1 lime
2 apples
1 cup wheat grass (trimmed from roots)
1 bunch kale

Wash all produce thoroughly.
Process all through juicer.
Stir and pour over ice.
Serve immediately.

Makes 2 portions

Groaning Cake: as featured in The Birth House

I recently finished reading The Birth House by Ami McKay. This recipe is mentioned several times. At first it appealed to me because it sounds delicious. As I continued reading it, the biggest part of the appeal became the sense of tradition, womanhood and community that were represented through this cake. The book states, “the tradition of groaning cake, or kimbly at (or following) a birth is an ancient one. Wives’ tales say the scent of a groaning cake baked in the birth house helps to ease the mother’s pain”.”

This afternoon I am off to celebrate the upcoming arrival of a good friend’s new baby. It seemed almost serendipitous that I should come across such a perfect recipe for the occasion.

2 1/2 cups flour (I used whole wheat)
1 tsp baking soda
2 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. cloves

3 eggs
1/4 cup vegetable oil
1/2 cup orange juice
1/4 cup molasses
1 1/3 cups sugar
1 1/2 cups apple (grated, no skin)
1 tsp. almond extract

Preheat oven to 350 F. Grease 2 loaf pans and set aside.

In a large bowl, sift together all dry ingredients except sugar. Add apple and stir well.

In a separate bowl, beat eggs. Add oil, orange juice, molasses and sugar and combine thoroughly.

Add wet ingredients to dry. Mix well. Stir in almond extract. Divide batter evenly between 2 loaf pans.

Bake at 350 F for 35-40 minutes until loaves are golden brown and toothpick inserted into center comes out clean.

Additions: raisins, dates, dried fruits, or nuts.

Cut each loaf into 12.
