Berry Basil Juice

We like to add basil to any juice for a fresh, herb flavour. However, basil can be a bit tricky to juice. We feed it through tube with other ingredients for best results. Basil helps with indigestion, nervous tension, stress and tension headaches.

1 bunch kale
2 small apples
2 cups strawberries
2 cups blueberries
handful fresh basil

Wash all produce thoroughly. Process through the juicer. Stir. Pour over ice and serve immediately.

2 weight watchers points per cup of juice.

Green Goodness Juice

Juicing is definitely gaining popularity. I first began learning about juicing in the Hungry for Change documentary http://www.hungryforchange.tv/ Afterwards, I was intrigued and curious to learn more. After (what felt like) extensive research, I purchased a Breville Juice Fountain which is a centrifugal juicing system. I’ve been juicing several times a week and have been loving experimenting with new creations. I definitely have increased my daily veggie intake and I have also been a having fun trying out new items from the produce section! Experts say that there are many benefits to drinking fresh juice including an improved immune system, increased energy and clear skin. No wonder it is becoming popular!

Green Goodness
1 English cucumber
1 lime
2 apples
1 cup wheat grass (trimmed from roots)
1 bunch kale

Wash all produce thoroughly.
Process all through juicer.
Stir and pour over ice.
Serve immediately.

Makes 2 portions
2 weight watchers points plus per serving

Portabella Mushroom Pizza

2 portabella mushroom caps
2 tsp pesto
6 mini bocconcinis halved
6 cherry tomatoes halved
1/4 cup diced red pepper
1/4 cup kale chopped
1 diced green onion
6 tbsp grated mozzarella
Fresh basil, chopped
Balsamic reduction (optional)

Turn oven on to 400 F. On a greased pan, bake mushroom caps for 3-4 minutes on each side to soften.

Remove from oven. Spread 1 tsp pesto on each cap. Then top with red pepper, green onion, kale, cherry tomato and bocconcini halves. Sprinkle mozzarella on top.

Bake for 10 minutes or until cheese is bubbling.

Remove from oven and top with fresh basil. Drizzle with balsamic reduction.
Serve hot. Pairs well with a spinach salad.
